Maddie's Favorite Ranch Dip/Dressing

Today, I'm finalizing the menu for December's Beef Wellington & Pear Tart Cookalong.

A year ago today, we were in the middle of our Salad Dressing Cookalong. I think the beginning of December is a great time to stock up the fridge with delicious homemade dressing so it's easy to keep things light between all those indulgent holiday meals.

Keep a bag or two of mixed salad greens and some assorted raw veg in the fridge along with some light protein like a roast chicken or quick and easy cooking fish or shrimp, and you can have a super delicious meal salad in minutes.

This recipe is one of Maddie's favorite homemade dip/dressings, and the peeps who've tried it tend to agree. :)

Maddie's Favorite Ranch Dip/Dressing

Makes about 1 cup
Time: 10 to 15 minutes

- 1/2 cup sour cream or yogurt
- 1/4 cup mayo
- 2 Tablespoons cream cheese, brought to room temperature
- 1 Tablespoon chopped fresh dill (or 1 teaspoon dried - but if you don't like dill, parsley's also good. Or basil, if you like that. Or cilantro if you like that. Or...)
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/2 teaspoon kosher salt
- 1 teaspoon sugar
- the green part of a green onion, chopped

Combine all ingredients in a medium bowl until completely and evenly incorporated.

If you like your dip a little more tart, try adding a teaspoon or two of white vinegar or fresh lemon juice.

Fresh tomatoes, cukes, broccoli, carrots, radishes, and sugar snap peas among other crunchy, yummy fresh veg go down a kid's gullet real easy with some of this stuff.
